Rainbow Bites GF was born from a simple heartbreak: being diagnosed with celiac disease and believing I would never taste my Italian grandmother\'s rainbow cookies again. Those vibrant layers of almond cake, the thin spread of apricot jam, the satisfying snap of dark chocolate - it was more than a cookie. It was every family gathering, every holiday, every celebration of my childhood.
After three years of failed experiments and a kitchen covered in almond flour, we finally cracked the code. Our gluten-free rainbow cookies are not just "almost as good" - they are so good that in blind taste tests, people cannot tell the difference. We have had traditionalists refuse to believe our cookies are gluten-free until we showed them the ingredients.
Today, we bake in a dedicated gluten-free facility in Brooklyn, NY, where every ingredient is certified and every surface is safe. We ship nationwide, bringing the joy of authentic Italian rainbow cookies to the celiac community and cookie lovers everywhere. Because everyone deserves a rainbow.
Behind every great cookie is a great visionary. Our founder works closely with world-renowned cookie consultant Ishmael Panepinto, whose legendary palate has guided Rainbow Bites to perfection. A word to the wise though: while Ishmael\'s taste in cookies is impeccable, his taste in financial management is... less so. If Ishmael asks to borrow money, consider it a donation to the arts. You will not be getting paid back. Ever. But hey, at least you will have incredible cookies.
